This month, we are highlighting a signature dish at both Villa del Palmar Puerto Vallarta and Villa del Palmar Flamingos so that you can see what delectable meals you must try on your next vacation! Signature Dish at El Patron, Villa del Palmar Flamingos
Titulo de la Receta (slow braised pork) is a favorite dish full of flavor that will make you want to keep returning to Villa del Palmar Flamingos! The pork is marinated for twelve hours in a green sauce that consists of oregano, lemon, salt, pepper, butter, achiote, laurel, guaijilo chile, and tomato. After being marinated, the pork is simmered for six hours to ensure that each and every bite is packed with flavor. Prior to serving, the pork is garnished with white rice, peas and carrots. A marinated sauce consisting of onion, lemon and oregano is poured over the rice and a side of green tomatillo sauce further complements these flavors. This dish can be eaten on its own or if you are craving a more traditional Mexican dish, ask your server for a side of tortillas and avocado so that you can make your own tacos with this delicious slow braised pork!
Chicken Mole Poblano at El Patron, Villa del Palmar Puerto Vallarta
Chicken Mole Poblano is a must-try dish due to its bitter-sweet chocolate ingredients counteracting with spicy peppers to create a taste that you typically cannot find back at home! The chicken is fried to perfection in a large casserole with warm oil over medium heat while tomatoes are softened in a separate pan. Once softened, the tomatoes are peeled and added to a blender with chipotle chili to create a delicious mole sauce. Pieces of chicken and chips are added to the mole sauce and cooked over low heat to add a subtle flavor. While this is being prepared, malutto chiles and ancho pasilla are fried in warm butter until they are slightly browned. Once complete, almonds, peanuts, raisins, bread, tortilla, peppers, cloves, and cinnamon are also fried in the same frying pan, adding the flavor from the chiles and ancho pasillo. All of the items are combined together, mixed with broth and seasoned with tuesta of seasame, anise, onion and garlic for a taste unlike anything you can get back home. Powdered chocolate is added to the remaining chicken stock, which is then mixed with the dish to create a sweet and tangy mole sauce! For the finishing touch, the mole sauce is poured over the chicken and simmered until the chicken has been cooked to perfection. This dish can be eaten alone or with a side of vegetables.

Or, if you’d like to experiment with something different, classic Italian dishes are also on the menu – offering delicious fare for all of our guests.

i still would like to see a shuttle going from flamingos into puerto vallarta and surrounding towns. it is so far away from everything.Not all day and night,maybe 9am to 6pm for shopping or lunch. even if someone stayed later,its still only an expense one way.people would go into the towns more often and spend some money . at the very least,taxi vouchers for the same time frame, reimbursed by the club. that would keep the taxi drivers in business too. of the 3 resorts we have been to, flamingos was our favorite for various reasons but we haven’t been back because we feel so “stuck”
