Perched above the Sea of Cortez with unobstructed views of El Arco, this beachside restaurant pairs Californian and Italian influences with a wood-burning pizza oven, fresh ceviche, and a setting where sunsets make every meal feel unhurried. When you want something bolder, Carbon Grill delivers a focused Argentinian menu built around live fire.

At Villa del Palmar Puerto Vallarta, Yashinoki earns its own conversation. The teppanyaki performance at the table is the centerpiece, but the kitchen’s command of traditional Japanese flavors would justify the reservation even without the show. La Trattoria, with its brick oven and honest Italian menu, is where a slow weeknight dinner becomes the meal you end up describing when you get home.
Loreto
Villa del Palmar at the Islands of Loreto approaches dining differently from the larger resort properties, and deliberately so. Danzante, the resort’s signature restaurant, takes its name from the nearby island and builds its menu around what the Sea of Cortez brings in. The kitchen responds to the season, which in practice means the fish on the plate was in the water yesterday and the preparation is careful enough to honor that. Casa Mia provides a warmer, more intimate setting for evenings when the view of the Biosphere Reserve islands in the last light is the only ambiance the meal needs. The beach bar and pool bar complete the day-to-night rhythm at a pace that suits this destination perfectly.
